Apple Oat Pancakes- Dairy Free, Gluten Free, Sugar Free

Pancakes were one of my favorite meals- for breakfast and for dinner! When I started experimenting with different recipes that were easier on my gut, I found that a lot of the recipes no longer reminded me of a traditional pancake, they were just… different. I have tried many types of flours. Almond flour is one of my favorites, as you have probably noticed. In this recipe I use Old Fashioned Oats that makes it a bit heartier. You might want to try a pecan flour or you can substitute your favorite flours for the oats. This pancake recipe is a super easy one to make for a fancy, or not so fancy, Sunday morning breakfast. Try topping with my Roasted Almonds recipe too!

Makes 4- 5in round pancakes

Ingredients:
1 Egg beaten
1 Tbsp Chia Seeds
¼ cup Coconut Milk
¼ cup water
½ cup Old Fashioned Oats
½ cup Almond Flour
Dash Salt
½ Tbsp Baking Powder
½ tsp vanilla
½ tsp Cinnamon
½ tsp Allspice
1 medium size Apple

In a mixing bowl combine egg, chia seeds, coconut milk and water. Let sit 2-3 minutes to soften the chia seeds. Add all remaining ingredients except apple and combine just until mixed. Grate half the apple into your mixture and stir. 

Spoon onto hot griddle or fry pan. Try to keep to about a 5 inch pancake. The larger you get, the harder it will be to flip. Level the pancake with the backside of your spoon. Cook until you can see the edges of your pancake start to look glossy, about 3 minutes. If you can peak at the griddle side, the bottom should be a light brown. Flip and cook the other side of the pancake, about 3 minutes. Let cool on a wire rack while you finish your batter. 

Thinly slice the remaining half of your apple. Put directly onto your pan and sprinkle with cinnamon. Cook to soften the apple, stirring every so often to make sure both sides of your slices are getting the heat of the pan. The smell of the sugar in the apple will get you ready to dig into your delicious pancakes!
